Cranberry Cider Stuffing
what you’ll need:
1 tablespoon non-GMO canola oil
¾ cup finely chopped onion
½ cup finely chopped celery (about 1 rib celery)
¾ teaspoon sea salt
½ teaspoon dried thyme
½ teaspoon dried sage
½ teaspoon granulated garlic
4 cups whole wheat bread (½”) cubes
1 ½ cups cooked pearl barley or wheat berries
⅓ cup dried cranberries
¼ cup finely chopped dried apples
½ cup HUB Hard Cider
¼ cup water
how to make:
- Preheat oven to 350˚F. Lightly oil an 8” square baking dish.
- In a medium skillet, warm oil over medium heat. Add onion and celery and cook, stirring, until softened, about 5 minutes. Remove from the heat and stir in salt, thyme, sage, and garlic. Transfer to a large mixing bowl and combine with bread cubes, cooked barley, cranberries and apples.
- Pour cider and water over stuffing and toss. Transfer stuffing to baking dish, cover tightly with foil, and bake until heated through, about 20 minutes.
